Oh My Goodness Bars/Brownies
Pre-heat your oven to 350 degreesIngredients:
- 3 cups of spelt flour
- 4 tbsp of organic applesauce
- 1 & 1/2 cups of spelt flakes
- ½ tsp of non-gmo baking powder
- 1/4 cup of maple syrup (Grade B)
- 2 cups of date sugar
- 1/4 cup of nut milk
- 1 tsp of organic vanilla extract
- 1 tsp of allspice
- 1 cup of coconut oil
- 1/2 cup walnuts
- 1/2 cup dried organic currants or raisins
- In a large bowl sift all the dry ingredients together.
- I like to add the vanilla extract to the nut milk first to ensure the flavor goes right through the mix.
- Lastly combine both the wet and dry ingredients together and mix with a hand mixer under well combined.
- Spread the mixture evenly in a 13x9 pan.
- Bake in the oven for approximately 30 minutes, but check after 20 minutes with a tooth pick – it will come away clean if the cake is cooked. This mix rises really well and if you know your oven is fast, perhaps try baking them at 10 degrees lower to avoid them splitting.
- Leave to cool in the pan for a while before adding the toppings.
- Meanwhile you can make up your cocoa topping to decorate however you wish. I decided to add shredded coconut for that special touch!
- If you want to make the OMG Bars do not add the organic applesauce, add 1 cup of coconut oil and add a half of cup of Alkaline Water.
Topping Ingredients:
- 1 100% cocoa bar
- 2 cups of organic coconut sugar
- 2 tsp organic vanilla extract
- 1/4 cup of maple syrup or agave
- 2 tbsp of nut milk.
Method:
- In a small pot, melt down the cocoa bar on low-med heat (stir slowly). Add all the ingredients together in order.
- Spread the topping over the bars. Add any extra toppings of your choice.
